Mediterranean veggie burgers
Animal-loving fitness instructor, Rebecca Louise, and partner Cory Scott, put their twist on the Mediterranean veggie burger at LIONSROCK Big Cat Sanctuary!
When influencer Rebecca Louise and her partner Cory made the trip to our LIONSROCK Big Cat Sanctuary in South Africa, we were excited to have them show us a delicious Mediterranean twist on this recipe. As a fitness instructor, Rebecca is passionate about nutrition and helping others to improve their lives through living a healthy lifestyle, so not only is this recipe delicious but nutritious too. Ingredients
Patties
- 1 can of chickpeas
- 2 medium size cooked beetroots (you can also use raw beets)
- 1 onion, diced
- ½ cup of oats
- 2 cloves of garlic
- Bunch of fresh basil
- ½ cup mint sauce
- 2 tablespoon chopped olives
- Jalapenos (to desired spiciness)
- salt, pepper
- 1 tablespoon olive oil
- 1 cup of vegan feta cheese
Greek Sauce
- 150ml soy or coconut yogurt
- 1 teaspoon crushed garlic
- 1 teaspoon lemon juice
- ½ cup mint sauce
- Jalapenos (to desired spiciness)
Instructions
- Preheat oven to 200°C (or if you intend to fry, you don't need to do this)
- Mix and drain the chickpeas well and dice the beets, dice or crush the garlic
- Add the chickpeas, beets, oatmeal, garlic (1 clove), basil, mint sauce, lemon zest/juice, jalapeños (as hot as you wish) and a few tablespoons of olive oil. Mix together in a food processer and process until everything is mixed well together but still has a bit of a chunky consistency. Following this, add in the vegan feta cheese, chopped olives and salt and pepper.
- Divide the mixture into 8 portions and shape into patties. If the mixture is too wet, add a couple tablespoons of oats, or if its too dry, add a few more dashes of olive oil.
- To make the Greek sauce, add mint sauce, garlic, lemon zest and basil (add some jalopenos if you want some spice!) to the soy yogurt.
- You can either bake the patties for 25-30 minutes, turning them over once halfway through baking time or fry them on a medium heat for 3-4 minuets either side. The burgers are best served when crispy.
To serve, put the burger patty in the bun first, along with sliced red onion, tomato and lettuce. Serve and enjoy!
